Sundays are a big day around here. We have such funky food requirements that I spend the ENTIRE day planning for the week ahead. I create meal plans, grocery lists, shop, and food prep for the week ahead. It’s no small task. Avani can’t have grains or sugar. Hugo can’t have potatoes, tomatoes or pepper. They are growing like crazy and need stupid amounts of protein to keep blood sugar in check. Neither can have more than a serving a day of dairy. Fun, eh? Oh, did I mention they are both ridiculously PICKY? No hummus eaters here folks. (well I am of course, but that hardly counts).
So I get up early and decide to make something super special for Sunday breakfast. Pancakes. Yum. I found a recipe for grain free, paleo pancakes with coconut oil, bananas and eggs.
We’ll call this Flop #1. See the problem isn’t so much that they were TERRIBLE (but they weren’t good either). The point is that you’re expecting PANCAKES. Like the “real” kind. So anyone who follows my Pinterest account and thought these looked good. You’re right, they do. But that woman is a freakin Ninja. (and my white blob was coconut flavored greek yogurt – high protein sneaky trick, but hers was whip cream I think… )
I felt somewhat guilty about my lack of an amazing Sunday meal so I set my goal to make up for it. And then meal planning took longer than expected and the grocery store was a zoo.
~ side note, in Austin the grocery stores sample wine. It’s fantabulous. I look forward to my hour of label reading zen carrying a half dozen tiny plastic shot cups filled with wine samples. (they do not sample wine in Montana – do they where you live? )
So. Flop #2. Dinner.
I had good intentions. I really did. But I was so involved with planning meals that I forgot about TODAY! So we had our version of “fast food”.
Clockwise starting at 12:00. Frozen sweet potatoes tots. Fried ham slices. Leftover turkey meatball. Basil, lime shrimp (ok those were for me), refried beans and square in the middle: you got it folks canned green beans like momma used to make. Yes, this dinner is horrible on so many levels. Canned food. Check. Frozen “food”. Check. But you know what? My kids thought it was AMAZING. So, there’s that. And I’m all prepped for the week ahead of me.
The saving grace to my funky food adventure today is that we have super high quality, high protein, meal replacement shakes. They have all of the amino acids, 70+ trace minerals, probiotics, enzymes, and high quality organic, non-gmo whey for glutathione. They are kid friendly, tasty, and doctor approved. And it’s one thing that my kids LOVE.
So it helps me to stress less about a serving missed of veggies (there is a powdered “green” that goes in the shake and kids never know it’s there) or not enough protein. I know we’re getting our essential vitamins, minerals, oils, and protein. Plus, they are better when they are on it. They feel better. They act better. Which lets momma feel better.
So bring on the frozen tators tots and canned green beans. We’ll have a chocolate shake for dessert and everyone is happy. Yay.

Nothing is worse then struggling with food sensitivities or allergies! I know first hand how upsetting and challenging the road can be! I have sensitivities to dairy, soy, wheat and grains in general. I found going off wheat the hardest because bread can be so good! I actually have a Paleo English muffin recipe on my site that has become a life saver for me. It is only a few ingredients and takes 2.5 mins in the micro. Almond flour, egg, honey (can omit), sea salt, coconut milk. If those ingredients are okay for your family, I would give it a try!
