So, we pack a lunch each day for my daughter. It’s not easy. Gluten free, (mostly grain free but we do cheat with brown rice on occasion), preservative free, sugar free, nut free (school policy not mine). Plus she has blood sugar issues so has to have PLENTY of protein snacks that keep her going through the day. Oh, did I mention it has to be kid friendly too?
So today, we had an Ace in the hole. Her favorite casserole with burger, garlic, brown rice, peas, cheese, and a homemade “cream of chicken soup” type roux with tapioca starch. She loves it. I can always count on the days we have this for her to be in a good mood after school as her blood sugar will be in a good place.
Except today she was crazy. Blood sugar crazy. And I found out she didn’t eat her lunch!! “Why oh why did you not eat your lunch, child?” “Because the kids tease me that it’s too stinky, so I closed my thermos”.
God help those children. They just ruined my Ace in the Hole lunch. Do you have any idea how hard it is to make kid-friendly, high protein, gluten free, sugar free, potato and tomato free food? Geez.
We may just have a home day tomorrow so I can have a day to adjust to a new non-stinky menu!!
